Scale

Lasagna Roll-Ups

  • 8 lasagna noodles
  • 2 cups cooked chicken, shredded
  • 1 cup ricotta cheese
  • 1/2 cup grated Parmesan cheese
  • 2 cloves garlic, minced
  • 1 egg
  • 1 teaspoon dried Italian seasoning
  • Salt and pepper to taste

Toppings and Sauce

  • 1/2 cup grated Parmesan cheese
  • 1 cup shredded mozzarella cheese
  • 2 cups marinara sauce
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Preheat oven: Preheat your oven to 375°F (190°C) to prepare for baking the lasagna roll-ups.
  2. Cook noodles: Cook the lasagna noodles according to package instructions until al dente. Drain and lay them flat on a baking sheet to avoid sticking.
  3. Prepare filling: In a large bowl, combine the shredded chicken, ricotta cheese, 1/2 cup Parmesan cheese, minced garlic, egg, Italian seasoning, salt, and pepper. Mix until the ingredients are well incorporated.
  4. Assemble roll-ups: Spread a thin layer of the chicken mixture evenly over each lasagna noodle, then carefully roll them up tightly from one end to the other.
  5. Prepare baking dish: Spread 1 cup of marinara sauce evenly over the bottom of a 9×13 inch baking dish to prevent sticking and add flavor.
  6. Arrange roll-ups: Place the assembled roll-ups seam side down in the baking dish, arranging them snugly side by side.
  7. Add sauce and cheese: Pour the remaining 1 cup of marinara sauce over the roll-ups, then sprinkle the shredded mozzarella cheese and remaining 1/2 cup Parmesan cheese evenly on top.
  8. Bake covered: Cover the baking dish with foil and bake in the preheated oven for 20 minutes to heat through and meld flavors.
  9. Bake uncovered: Remove the foil and continue baking for an additional 10 minutes, or until the cheese on top is bubbly and turns golden brown.
  10. Garnish and serve: Remove from the oven and garnish with freshly chopped parsley before serving warm.

Notes

  • Use cooked chicken leftover from a previous meal or rotisserie chicken for convenience.
  • To prevent noodles from sticking together, spread them out flat immediately after boiling.
  • Feel free to substitute marinara sauce with your favorite tomato sauce or a homemade option.
  • Ricotta can be swapped with cottage cheese for a slightly different texture.
  • For extra flavor, add red pepper flakes or fresh basil to the chicken mixture.
  • Allow the roll-ups to rest for 5 minutes after baking for easier serving.
