Apple Samoas Recipe

4.4 from 112 reviews

Apple Samoas are a delicious and healthy dessert that combines crisp apple slices topped with a creamy coconut and nut butter mixture, drizzled with melted chocolate. This no-bake treat offers the perfect balance of sweetness and crunch, inspired by the flavors of classic Samoas cookies but made with fresh, wholesome ingredients.

Ingredients

Scale

Fruit

  • 1 apple (Honeycrisp or Pink Lady preferred)

Toppings

  • ⅓ cup unsweetened shredded coconut
  • 3 tablespoons almond butter or cashew butter (or seed butter of choice)
  • ½ tablespoon maple syrup

Chocolate Drizzle

  • 2 tablespoons chocolate chips
  • ½ teaspoon coconut oil

Instructions

  1. Prepare apple slices: Cut the apple into ¼-inch thick slices and core each slice. You should get about 3-4 slices depending on the size of your apple.
  2. Make the coconut-nut butter mixture: In a bowl, thoroughly mix together the shredded coconut, almond or cashew butter, and maple syrup until well combined and spreadable.
  3. Top apple slices: Spoon the coconut and nut butter mixture evenly on top of each apple slice, spreading it out gently to cover the surface.
  4. Prepare baking surface: Place the topped apple slices on a sheet of parchment paper to prevent sticking and for easy transfer.
  5. Melt chocolate drizzle: In a microwave-safe bowl, melt the chocolate chips together with the coconut oil in short increments, stirring frequently until smooth and combined.
  6. Drizzle chocolate and chill: Drizzle the melted chocolate over the coconut-topped apple slices. Then place the assembled slices in the freezer for 5-10 minutes or until the chocolate has firmed up. Serve immediately and enjoy!

Notes

  • You can substitute the nut butter with any seed butter, such as sunflower or tahini, to suit dietary preferences.
  • For extra texture, toast the shredded coconut lightly before mixing.
  • Use dark chocolate chips for a richer, less sweet flavor.
  • Store leftover Apple Samoas in the freezer for up to 2 days, and allow them to soften slightly before eating.
  • Cut apples immediately before serving to prevent browning or toss slices briefly in lemon juice.
