  • 1 tbsp Dijon Mustard
  • 1 tbsp Mayonnaise
  • 2 tsp Everything But The Bagel seasoning
  • 1 tsp Honey
  • 3 leaves Fresh Sage, chopped
  • Pinch of Salt

Main Ingredients:

  • 68 slices Bacon
  • 1 Fuji Apple, sliced thinly
  • 1/2 cup Sharp Cheddar Cheese, shredded
  • 1/2 cup Mozzarella Cheese, shredded
  • 34 sprigs Fresh Thyme, leaves picked
  • 4 tbsp Salted Butter
  • 4 slices Sourdough Bread

Instructions

  1. Cook Bacon: Preheat oven to 375°F. Place bacon slices on a baking sheet and bake for 15-20 minutes until golden brown and crisp. Once done, increase the oven temperature to 400°F.
  2. Prepare the Spread: In a small bowl, combine the Dijon mustard, mayonnaise, Everything But The Bagel seasoning, honey, chopped fresh sage, and a pinch of salt. Stir thoroughly until well combined.
  3. Assemble the Sandwiches: Spread about 1 tablespoon of the prepared dijon mixture onto two slices of sourdough bread. Sprinkle shredded sharp cheddar and mozzarella cheese on top according to preference. Layer 3 to 4 slices of cooked bacon and 5 to 6 thin apple slices over the cheese. Sprinkle fresh thyme leaves on top, then press the sandwich together.
  4. Prepare for Baking: Place the sandwiches on an oven-safe skillet or frypan. Spread 1 tablespoon of salted butter on the top surface of each sandwich, and add 1 tablespoon of butter to the pan underneath the sandwiches.
  5. Bake the Sandwiches: Bake the sandwiches in the oven at 400°F for 8-10 minutes, until the cheese is visibly melted and the bread begins to brown.
  6. Finish on the Stove: Remove the pan from the oven and place it over medium-high heat on the stovetop. Add additional butter if needed and cook each side of the sandwich for 2-3 minutes until golden brown and crispy.
