For the Onion Topping
- 2 Tbsp. extra-virgin olive oil
- 1 large (or 2 small-medium) yellow onion, peeled and sliced
- 3 to 4 garlic cloves, minced
- 1/4 to 1/2 tsp. crushed red pepper flakes (optional)
- 1/2 tsp. kosher salt
For the Pizza
- 16 oz. fresh pizza dough, room temperature (or gluten free frozen pizza dough)
- 3/4 cup canned pumpkin puree
- 5 oz. freshly grated gouda cheese (about 1 1/4 cups)
- Optional: finely chopped fresh parsley for garnish
- Caramelize Onions: Heat olive oil in a large skillet over medium heat. Add the sliced onions and cook, stirring occasionally, for 7 to 8 minutes until they become soft. Reduce the heat to low and continue cooking the onions for an additional 20 to 30 minutes, stirring every few minutes to prevent sticking and uneven browning, until they reach a blonde color. During the last 5 minutes of cooking, stir in the minced garlic, kosher salt, and crushed red pepper flakes if using. This slow caramelization enhances the sweetness and depth of flavor.
- Prepare Oven and Dough: Place a rack in the center-top position of the oven and preheat it to 475°F (245°C). Place a pizza stone or a baking sheet on this rack to heat up. On a floured surface, stretch or roll out the pizza dough into a 12 to 14 inch round, sprinkling flour as needed to prevent sticking. Transfer the rolled dough carefully to a piece of parchment paper and pierce the dough several times with a fork to minimize bubbling during baking.
- Assemble and Bake Pizza: Evenly spread the canned pumpkin puree over the dough, leaving about a 1/2 inch border around the edges. Distribute the caramelized onion and garlic mixture evenly over the pumpkin layer. Top the pizza with the grated gouda cheese. Using the parchment paper, transfer the pizza onto the preheated stone or baking sheet. Bake for approximately 12 minutes, or until the crust bottom is crisp and the cheese has melted. Optionally garnish with freshly chopped parsley. Slice the pizza into 8 pieces and serve immediately.
Notes
- Using a pizza stone helps achieve a crispier crust but a baking sheet works as well.
- The slow-cooked caramelized onions add deep flavor; resist the urge to increase heat to speed up this process.
- You can substitute gouda with another semi-soft cheese like fontina or mozzarella for a different twist.
- If you prefer a spicier pizza, increase the crushed red pepper flakes or add a drizzle of chili oil.
- For gluten-free option, use certified gluten-free pizza dough and ensure all other ingredients are gluten-free.
